A little something sweet from Baba’s kitchen

I love a dessert that feels like a treat without making a whole cake. This one started with a simple thought: blend cottage cheese until it is creamy, tuck it over a graham cracker crust, and finish with the cozy taste of cinnamon. It is just one mug, made with everyday ingredients and a powdered sugar substitute. Sometimes a little sweet bite is all you need.

How to make it

Directions

  1. 1

Mix the graham cracker crumbs with the melted butter. Press into the bottom of a mug or small dessert dish.

  2. 2

Blend the cottage cheese until completely smooth. Add 1 tablespoon powdered sugar substitute, vanilla, lemon juice, and half the cinnamon. Blend again. For a firmer filling, blend in the optional pudding mix.

  3. 3

Spoon the filling over the crust. Mix the remaining cinnamon with the ½ teaspoon sugar substitute and sprinkle on top.

  4. 4

Refrigerate for at least 30 minutes before eating.

Baba’s tip

Taste the filling before chilling. Powdered sweeteners vary, so add a little more if you like it sweeter. The pudding mix helps it set more firmly; without it, the filling stays softer.
