Bonus breakfast

Pumpkin Oat Muffin Mug

Ingredients · 1 serving

  • ¼ cup quick oats
  • ¼ cup 2% cottage cheese
  • 1 large egg plus 1 egg white
  • 2 Tbsp plain canned pumpkin purée
  • 1 tsp brown sugar
  • ¼ tsp baking powder
  • ½ tsp pumpkin pie spice
  • ¼ tsp vanilla extract
  • Pinch of salt
  • 2 Tbsp plain Greek yogurt, for topping

Directions

  1. Blend the oats into a coarse flour. Blend or mash the cottage cheese until mostly smooth, then whisk with the egg, egg white, pumpkin, brown sugar and vanilla.
  2. Stir in oats, baking powder, pumpkin pie spice and salt. Pour into a lightly greased 16–20 oz microwave-safe mug, leaving space for it to rise.
  3. Microwave uncovered for 60 seconds. Continue in 15–20 second bursts until the center is fully set. Let stand 2 minutes; the mug will be hot. Spoon the Greek yogurt on top.

BJ’s tip: Quick oats keep it tender. It has a soft muffin texture and tastes best warm. For a sweeter muffin, add another teaspoon of brown sugar and count about 4 g more carbs.

A little something sweet

2 bonus dessert mugs

Protein-focused treats with familiar ingredients, a little real sugar and no protein powder or specialty flour. They are lower carb than a typical cake dessert, though they are not strict keto recipes.

  • 1 tsp milk for the drizzle

Directions

  1. Blend cottage cheese, egg, cocoa, 2 tsp of the peanut butter, sugar and vanilla until smooth. Pour into a lightly greased 16–20 oz microwave-safe mug or small bowl.

  3. Mix the remaining 1 tsp peanut butter with the milk until spoonable, then drizzle over the custard. Eat warm or chill for a fudgier texture.

BJ’s tip: It sets like a soft chocolate custard. Cocoa and peanut butter give it a richer flavor without a flour or protein powder.
