Lemon-Butter Salmon Dinner

What you’ll need

  • 5 oz raw boneless salmon fillet
  • 5 oz baby potatoes, quartered
  • 1 cup trimmed green beans
  • 1 tsp olive oil
  • 1 tsp butter
  • 1 Tbsp lemon juice
  • ¼ tsp garlic powder
  • Salt and black pepper, to taste

Put dinner together

  1. Heat the oven to 425°F. Toss the quartered potatoes with olive oil, garlic powder and a pinch of salt and pepper on a sheet pan. Roast for 10 minutes.
  2. Add the salmon to the pan, dot with butter and drizzle with lemon juice. Roast for another 10–14 minutes, until the salmon reaches 145°F in its thickest part and the potatoes are tender. Remove the fish first if it finishes before the potatoes.
  3. Steam the green beans for 5–7 minutes until tender. Serve the entire salmon fillet with all the potatoes and green beans.

What you’ll need

  • 4 oz cooked, trimmed pork tenderloin, sliced
  • 1 medium sweet potato (about 150 g)
  • 1½ cups broccoli florets
  • 1 tsp butter
  • 1 tsp olive oil
  • ¼ tsp garlic powder
  • Salt and black pepper, to taste

Put dinner together

  1. Scrub the sweet potato and pierce it several times with a fork. Microwave on a microwave-safe plate for 5–8 minutes, turning halfway, until tender. Rest for 2 minutes.
  2. Steam the broccoli for 4–6 minutes until tender. Toss with olive oil and garlic powder.
  3. Warm the sliced cooked pork with a splash of water in a covered skillet. Split the potato and add the butter. Plate with all the pork and broccoli, then season to taste.
