Cottage Cheese Biscuits

    Heat the oven to 425°F. Line a baking sheet with parchment paper.

    In a large bowl, whisk together the all-purpose flour, Kodiak mix, baking powder, baking soda, salt, garlic powder, black pepper, and smoked paprika.

    Add the cold cubed butter. Cut it into the dry ingredients with a pastry cutter or your fingertips until small, pea-sized pieces of butter remain throughout.

    In a separate bowl, stir together the cottage cheese, Greek yogurt, and eggs.

    Add the wet mixture to the dry mixture. Fold gently just until the dough is mostly combined, then fold in the cheddar, bacon, and green onions.

    If the dough seems too dry or crumbly, add milk or buttermilk 1 tablespoon at a time. The dough should be thick, soft, and a little sticky.

    Turn the dough onto a lightly floured surface. Pat it into a rectangle about 1 inch thick and fold it in thirds like a letter.

    Turn the dough 90 degrees, gently pat it back out, and fold it once more to create biscuit-like layers.

    Pat the dough to about 1¼ inches thick and cut it into 8 large square biscuits. Squares mean no scraps to reroll.

    Place the biscuits on the prepared pan with a little space between them. Sprinkle with extra cheddar, if desired.

    Bake for 16–20 minutes, until the tops are golden and the centers are cooked through. Brush with melted butter while hot.

Keep the butter cold and handle the dough gently. Those two folds create the biscuit-like layers without overworking the dough.
